Terroir | A unique terroir, as the vines are planted at the confluence of two rivers, the Sèvre and the Maine. Vines of 65 years old. Subsoil of metamorphic rock: two-mica and garnet gneiss. |
Winemaking methods | The must is pumped into new oak barrels at the start of fermentation. Once this is complete (after approximately three weeks), the wine is matured on lees in barrels until bottling in about April. No malolactic fermentation. |
Tasting | Very golden coloured wine. Balanced nose of vanilla and sweet stewed fruits. Notes of toast and roasted coffee on the palate. |
Recommended with… | Fish dishes in sauce, white meats, and also cheese. Enjoy chilled at approximately 12°C. |
